Can I see every video from one performer at once?

Yes. Each performer is a filter, so selecting a name narrows your library to just their videos in one step. You can combine that with tags or a collection to get more specific, such as one performer within one category.

What if a site does not list the cast?

Extraction depends on what the source page exposes, so a site with no cast block may save without performers. When that happens you can add the names yourself, and every video you tag that way is filterable from then on, the same as an auto-extracted one.
